Strawberry Rhubarb Smoothie

Instructions
- Chop the rhubarb into 1-inch pieces and boil for one minute.
- Transfer the rhubarb to a bowl of ice water to stop the cooking.
- Place all ingredients in a blender and combine until smooth.
- Taste and add more honey if needed.
- Divide the smoothie into 3 glasses and enjoy.
