Ingredients

Baked Potatoes

  • 4 medium baking potatoes
  • 1 spray cooking spray or olive oil
  • to taste none salt

Topping

  • pounds broccoli florets

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • cups milk
  • cups sharp cheddar cheese, shredded
  • ¼ teaspoon cayenne
  • to taste none salt and pepper

Instructions

  1. Poke potatoes with a fork several times and wrap each in foil after coating with cooking spray and salt.
  2. Place wrapped potatoes in the slow cooker and cook on low for 8-10 hours.
  3. Boil broccoli in salted water until tender, about 3-5 minutes, then drain and keep warm.
  4. Melt butter in a pot, whisk in flour, and cook until golden.
  5. Slowly add milk while whisking to avoid lumps, cooking until thick and bubbly.
  6. Stir in cheese, cayenne, salt, and pepper until melted.
  7. Slice open potatoes, top with broccoli, and drizzle with cheese sauce.
