Easy Cheesy Chicken Noodles

Ingredients

The noodles and sauce

  • 1 clove garlic, minced
  • 2 cups chicken broth
  • ½ lb. egg noodles (homestyle, thick and doughy)
  • ½ tablespoon cornstarch
  • 3 tablespoons cold water
  • 12 oz. cooked, shredded chicken breast
  • 1 tablespoon butter
  • 2 tablespoons milk
  • ½ cup shredded cheese (Cheddar and Monterrey Jack)

Toppings

  • to taste crumbled bacon or breadcrumbs

Instructions

  1. 1. Sauté garlic in olive oil until soft and fragrant.
  2. 2. Add chicken broth and bring to a boil, then add noodles and cook until just barely done.
  3. 3. Dissolve cornstarch in cold water and add to the boiling noodles, cooking for another minute.
  4. 4. Remove from heat and stir in shredded chicken without draining the broth.
  5. 5. Let the noodles cool slightly to thicken the broth into a sauce.
  6. 6. Return the pan to low heat and mix in butter, milk, and cheese for a few minutes.
  7. 7. Top with crumbled bacon or breadcrumbs and serve immediately.
