Ingredients

  • 2 medium boneless skinless chicken breasts
  • to taste salt and pepper
  • cooking spray or olive oil
  • 1 tablespoon butter
  • ½ large onion, diced
  • 2 large cloves garlic, minced
  • 2 large carrots, peeled and sliced
  • 2 ribs celery, sliced
  • 8 cups chicken broth
  • cups uncooked pasta
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • ½ cup heavy cream

Instructions

  1. Season the chicken breasts with salt and pepper, then brown them in a pot with oil.
  2. Add water to the pot, cover, and simmer until the chicken is cooked through.
  3. Remove the chicken and set aside, reserving any juices.
  4. In the same pot, melt butter and sauté onions until translucent, then add garlic and cook briefly.
  5. Add carrots, celery, and chicken broth, then simmer for 20 minutes.
  6. Stir in the pasta and spices, cooking until the pasta is al dente.
  7. Shred or dice the chicken and return it to the pot along with the heavy cream.
  8. Simmer for 1 minute, then serve.
