Instructions
- Preheat the oven to 180C/350F and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the sugars and coconut oil until glossy.
- Add the almond milk and vanilla extract, mixing well.
- Incorporate the sifted flour, baking powder, baking soda, and salt, mixing until a dough forms.
- Fold in the vegan chocolate chips and form 12-15 balls of dough.
- Place the dough balls on the lined baking sheet and top with extra chocolate chips.
- Bake for 10-12 minutes until the edges are slightly golden.
- Allow the cookies to cool completely on the tray before serving.
