Roasted Carrot Hummus

Ingredients

For roasting

  • 1 cup chopped carrots
  • 2 tablespoons chopped shallots
  • 4 cloves fresh garlic
  • ¼ cup veggie broth
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon crushed red pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon sea salt

For the dip

  • 15 ounces cooked white beans
  • ¼ cup veggie broth
  • 2 tablespoons pine nuts
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh chopped parsley
  • ½ teaspoon sea salt
  • ¼ teaspoon smoked paprika

Optional garnishes

  • to taste chopped roasted red pepper
  • to taste pine nuts
  • to taste fresh parsley
  • to taste crushed red pepper flakes
  • to taste drizzle of olive oil

Instructions

  1. Combine all roasting ingredients in a glass baking dish and bake at 400°F (200°C) for 30-35 minutes until the carrots are soft and beginning to brown.
  2. Add the dip ingredients to a food processor.
  3. Once the carrots are roasted, add them to the food processor and blend until smooth.
  4. Garnish with optional ingredients and serve with your favorite dippers.
