Instructions
- Combine all roasting ingredients in a glass baking dish and bake at 400°F (200°C) for 30-35 minutes until the carrots are soft and beginning to brown.
- Add the dip ingredients to a food processor.
- Once the carrots are roasted, add them to the food processor and blend until smooth.
- Garnish with optional ingredients and serve with your favorite dippers.
