Roasted Red Pepper Hummus

Instructions
- Combine all ingredients except for the oil and cilantro in a food processor or blender.
- Process until smooth, then add the olive oil in a steady stream while processing until the desired consistency is reached.
- Add the cilantro and pulse a few times to distribute evenly.
- Chill for at least an hour before serving.
- Serve with pita chips and fresh veggies, or use as a spread.
