Ingredients

  • 1 15-oz. can chickpeas (garbanzo beans), rinsed and drained
  • 2 cloves garlic, smashed
  • ½ cup drained and chopped roasted red bell peppers
  • cup tahini
  • ¼ cup fresh lemon juice (about 1 large lemon)
  • 1 teaspoon kosher salt
  • ¼ teaspoon cumin
  • ¼ teaspoon coriander
  • ¼ teaspoon ground red pepper (or red pepper flakes)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped fresh cilantro, plus more for garnish

Instructions

  1. Combine all ingredients except for the oil and cilantro in a food processor or blender.
  2. Process until smooth, then add the olive oil in a steady stream while processing until the desired consistency is reached.
  3. Add the cilantro and pulse a few times to distribute evenly.
  4. Chill for at least an hour before serving.
  5. Serve with pita chips and fresh veggies, or use as a spread.
