Ingredients

Hummus

  • 1 15oz. can chickpeas
  • ¼ cup lemon juice
  • ¼ cup tahini
  • 2 Tbsp olive oil
  • ¼ tsp ground cumin
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ¼ cup water

Wrap

  • ½ 12oz. jar roasted red peppers
  • 1 whole cucumber
  • 3 oz. feta
  • 6 pieces pitas
  • 6 cups baby spinach or baby greens

Instructions

  1. Drain the chickpeas and blend them with lemon juice, tahini, olive oil, cumin, garlic powder, and salt until crumbly.
  2. Gradually add water while blending until the hummus is smooth and fluffy.
  3. Slice the roasted red peppers and cucumber thinly, and cube the feta.
  4. Spread about ¼ cup of hummus on each pita.
  5. Add roasted red pepper strips, a few feta cubes, sliced cucumber, and a handful of baby spinach.
  6. Fold the pita and enjoy.
