Roasted Red Pepper Hummus

Instructions
- Preheat the oven to 450ºF and prepare a baking sheet.
- Place the garlic cloves and red pepper on the baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt.
- Roast for 15 minutes, then flip and roast for another 15 minutes until the red pepper has black spots.
- Remove from the oven and let cool.
- In a food processor, blend the garbanzo beans, tahini, lemon juice, and cumin until smooth.
- Add the roasted red pepper and garlic to the food processor and blend until smooth.
- Serve with vegetables or crackers.
