Roasted Red Pepper Hummus

Ingredients

  • 1 large red pepper
  • 4 whole garlic cloves
  • 3 tablespoons olive oil
  • 15 oz canned garbanzo beans
  • 3 tablespoons tahini
  • 3 tablespoons lemon juice
  • ½ teaspoon ground cumin
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 450ºF and prepare a baking sheet.
  2. Place the garlic cloves and red pepper on the baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt.
  3. Roast for 15 minutes, then flip and roast for another 15 minutes until the red pepper has black spots.
  4. Remove from the oven and let cool.
  5. In a food processor, blend the garbanzo beans, tahini, lemon juice, and cumin until smooth.
  6. Add the roasted red pepper and garlic to the food processor and blend until smooth.
  7. Serve with vegetables or crackers.
