Spicy Roasted Red Pepper Hummus

Instructions
- Preheat the oven to 400°F and line a baking sheet with a silicone mat or parchment paper.
- Slice the tops off the bell peppers, halve them, and place them cut side down on the baking sheet along with the whole cherry tomatoes.
- Drizzle the peppers and tomatoes with olive oil and rub it in.
- Bake for 40 minutes until the peppers are soft and the tomatoes are shriveled.
- Remove from the oven and let cool.
- In a food processor, combine all ingredients except the tomatoes and extra chickpeas.
- Blend until completely smooth.
- Transfer to a serving bowl, drizzle with olive oil, and top with tomatoes and extra chickpeas. Serve with pita chips.
