Spicy Roasted Red Pepper Hummus

Ingredients

  • 2-3 pieces red bell peppers
  • 1 cup cherry tomatoes
  • 1 ½ cups cooked chickpeas
  • ¼ cup water
  • ¼ cup olive oil
  • ¾ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • Juice of two pieces limes
  • 2 tablespoons ground harissa
  • ¼ cup tahini
  • 4 cloves roasted garlic
  • Additional amount chickpeas for topping

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with a silicone mat or parchment paper.
  2. Slice the tops off the bell peppers, halve them, and place them cut side down on the baking sheet along with the whole cherry tomatoes.
  3. Drizzle the peppers and tomatoes with olive oil and rub it in.
  4. Bake for 40 minutes until the peppers are soft and the tomatoes are shriveled.
  5. Remove from the oven and let cool.
  6. In a food processor, combine all ingredients except the tomatoes and extra chickpeas.
  7. Blend until completely smooth.
  8. Transfer to a serving bowl, drizzle with olive oil, and top with tomatoes and extra chickpeas. Serve with pita chips.
