Ingredients

The hummus

  • medium red bell peppers
  • 1 15 oz can chickpeas
  • 3 Tbsp fresh lemon juice
  • 3 Tbsp tahini
  • 2 cloves garlic
  • ½ tsp salt
  • ¼ tsp cumin
  • 2 Tbsp olive oil

For garnish

  • to taste red pepper flakes
  • to taste parsley

Instructions

  1. Broil the red bell peppers until charred, then peel and cool them.
  2. In a food processor, combine chickpeas, tahini, garlic, salt, cumin, and lemon juice; pulse until smooth.
  3. Add the roasted peppers and olive oil to the mixture; pulse until creamy.
  4. Plate the hummus, making an indentation in the center; drizzle with olive oil and garnish with diced peppers, parsley, and red pepper flakes.
  5. Serve with pita chips or fresh veggies.
