Roasted Garlic Hummus

Instructions
- Preheat the oven to 400°F.
- Cut the top of the garlic head to expose the cloves, drizzle with 1 ½ tsp olive oil, wrap in foil, and roast for 35 - 45 minutes until golden brown.
- Allow the garlic to cool.
- In a food processor, combine chick peas, lemon juice, tahini, salt, and cumin; pulse for 2 minutes.
- Scrape down the sides, add 2 Tbsp olive oil, and add about 10 - 11 roasted garlic cloves (reserve 3 - 4 for garnish).
- Pulse for 1 minute, then add water and pulse for another 1 - 2 minutes until smooth.
- Plate the hummus, create an indentation in the center, and drizzle with 1 - 2 Tbsp olive oil if desired.
- Chop the reserved garlic and sprinkle over the top along with parsley and red pepper flakes.
- Serve with fresh veggies or pita chips, and store leftovers in an airtight container in the refrigerator.
