Roasted Garlic Hummus

Ingredients

The base

  • 1 large head garlic
  • 2 ½ Tbsp olive oil
  • 1 15 oz can chick peas
  • 3 Tbsp fresh lemon juice
  • 3 Tbsp tahini
  • ½ tsp salt
  • ¼ tsp ground cumin
  • 2 - 3 Tbsp water

For garnish

  • Chopped fresh parsley
  • Red pepper flakes

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the top of the garlic head to expose the cloves, drizzle with 1 ½ tsp olive oil, wrap in foil, and roast for 35 - 45 minutes until golden brown.
  3. Allow the garlic to cool.
  4. In a food processor, combine chick peas, lemon juice, tahini, salt, and cumin; pulse for 2 minutes.
  5. Scrape down the sides, add 2 Tbsp olive oil, and add about 10 - 11 roasted garlic cloves (reserve 3 - 4 for garnish).
  6. Pulse for 1 minute, then add water and pulse for another 1 - 2 minutes until smooth.
  7. Plate the hummus, create an indentation in the center, and drizzle with 1 - 2 Tbsp olive oil if desired.
  8. Chop the reserved garlic and sprinkle over the top along with parsley and red pepper flakes.
  9. Serve with fresh veggies or pita chips, and store leftovers in an airtight container in the refrigerator.
