Roasted Garlic and White Bean Hummus

Ingredients

  • 2 to 3 heads garlic
  • 3 cups cooked Great Northern beans
  • ⅓ to ½ cup cooking liquid or water
  • ¼ cup olive oil
  • ¼ cup tahini
  • to taste salt
  • to taste black pepper
  • 3 tablespoons lemon juice
  • for sprinkling chopped fresh rosemary

Instructions

  1. Preheat the oven to 425°F and prepare the garlic for roasting.
  2. Roast the garlic in foil for about 30 minutes until golden and soft.
  3. In a food processor, combine white beans, cooking liquid or water, olive oil, tahini, salt, pepper, and lemon juice.
  4. Once the garlic is cool, squeeze the cloves into the food processor and blend until smooth.
  5. Transfer the mixture to a saucepan and heat until warm, then sprinkle with rosemary.
  6. Serve with vegetables, pita, or as a pasta sauce.
