Ingredients

The dip

  • 16 ounces white beans
  • 3 cloves roasted garlic
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 3-4 tablespoons olive oil
  • 2 tablespoons room temperature water
  • 1 teaspoon chopped oregano
  • 1 teaspoon chopped basil
  • 1 teaspoon chopped parsley

To serve

  • to taste olive oil for drizzling
  • to taste parsley for garnish

Instructions

  1. Drain and rinse the white beans, then pat them dry.
  2. In a food processor, combine all the dip ingredients and blend until smooth and creamy.
  3. Adjust the consistency with more olive oil if desired, and add extra seasonings as needed.
  4. Transfer the dip to a bowl and let it chill for 2 hours to enhance the flavors.
  5. Before serving, drizzle with olive oil and garnish with parsley.
