White Bean Dip with Rosemary

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary needles
  • 15 ounce can great northern beans, drained and rinsed
  • 2 cloves garlic, roughly chopped
  • 2 tablespoons lemon juice
  • ½ teaspoon coarse salt
  • 1 tablespoon water, to thin as needed
  • to taste freshly ground black pepper
  • to taste red pepper flakes

Instructions

  1. Heat a small pan over medium heat and drizzle in olive oil.
  2. Add the rosemary to the oil and bloom for 30 seconds until fragrant, then remove from heat.
  3. In a food processor, combine the beans, bloomed rosemary with oil, garlic, lemon juice, and salt.
  4. Process until the mixture is very smooth, adding water as needed to achieve desired consistency.
  5. Taste and adjust salt if necessary.
  6. Serve topped with black pepper, red pepper flakes, and a drizzle of olive oil.
