Ingredients

The dip

  • cups cooked cannellini beans
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon lemon zest
  • 1 small garlic clove
  • ½ teaspoon sea salt
  • to taste freshly ground black pepper
  • 2 to 4 tablespoons water (if needed)

Optional herbs

  • 2 tablespoons torn fresh basil leaves
  • 2 teaspoons chopped fresh rosemary leaves

Instructions

  1. In a food processor, combine the cannellini beans, olive oil, lemon juice, lemon zest, garlic, salt, and pepper.
  2. Pulse until the mixture is combined. If the dip is too thick, gradually add water while processing until smooth.
  3. Blend in the optional fresh herbs if desired.
  4. Serve the dip with veggies or pita chips.
