Healthy White Bean Dip

Ingredients

  • 2 cans Cannellini Beans
  • ½ onion Onion
  • ½ teaspoon Cumin
  • to taste none Salt
  • to taste none Pepper
  • ½ cup Olive Oil
  • 1 lemon Lemon Juice
  • 2 cloves Garlic

Instructions

  1. Heat a pan over medium heat and add the oil.
  2. Once the oil is hot, add the chopped onion, salt, pepper, and cumin. Sauté for about 4-5 minutes until the onion softens.
  3. Remove the pan from heat and add the sautéed onion to a food processor or blender.
  4. Add the rinsed cannellini beans, olive oil, lemon juice, and garlic to the processor.
  5. Blend for about 4 minutes until the desired consistency is achieved.
  6. Taste and adjust seasonings as needed.
  7. Serve with chips, veggies, or crackers, and store leftovers in an airtight container in the fridge for up to one week.
