Hot White Bean Dip

Ingredients

  • 2 slices bacon
  • 4 cloves garlic, minced
  • cup low-sodium chicken broth
  • 1 can cannellini beans, drained (14-ounce)
  • ¼ cup chopped green onions
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon hot sauce
  • teaspoon salt
  • teaspoon paprika
  • teaspoon crushed rosemary

Instructions

  1. Cook the bacon in a saucepan until crispy, then drain on paper towels.
  2. Reserve some bacon drippings in the pan, about 2-3 teaspoons.
  3. Add minced garlic to the drippings and cook for 1 minute.
  4. Add the drained beans and chicken broth to the pan, bring to a boil, then simmer uncovered for 10 minutes.
  5. Transfer the bean mixture to a food processor, add green onions, lemon juice, hot sauce, and spices, and process until smooth.
  6. Stir in reserved bacon or pulse it in the processor for better distribution.
  7. Adjust seasoning with salt, hot sauce, and lemon juice to taste.
  8. Serve warm with pita chips.
