Warm Tuscan White Bean Dip

white cannellini or white kidney beans

Instructions
- Heat 1 Tbsp. of olive oil in a medium skillet over medium heat.
- Sauté the minced green onions until softened, about 3-4 minutes.
- Add minced garlic and sauté for an additional 30-60 seconds.
- Stir in sun-dried tomatoes, lemon juice, white beans, 2 Tbsp. water, and rosemary. Cover and heat for 1-2 minutes.
- Transfer mixture to a food processor, add the remaining 1 Tbsp. of oil, and blend until smooth. Add hot water as needed to achieve desired consistency.
- Transfer to a serving dish, sprinkle with minced green onions, and drizzle with olive oil.
- Serve warm with fresh vegetables, crackers, or tortilla chips.
