Warm Tuscan White Bean Dip

Ingredients

  • 2 cans (15 oz.) white cannellini or white kidney beans
  • 4 pieces green onions
  • 4 cloves garlic
  • ½ cup sun-dried tomatoes
  • ½ piece lemon (juice)
  • 2 tsp fresh rosemary
  • ¼ tsp crushed red pepper flakes (optional)
  • 2 Tbsp olive or avocado oil
  • to taste sea salt & pepper

Instructions

  1. Heat 1 Tbsp. of olive oil in a medium skillet over medium heat.
  2. Sauté the minced green onions until softened, about 3-4 minutes.
  3. Add minced garlic and sauté for an additional 30-60 seconds.
  4. Stir in sun-dried tomatoes, lemon juice, white beans, 2 Tbsp. water, and rosemary. Cover and heat for 1-2 minutes.
  5. Transfer mixture to a food processor, add the remaining 1 Tbsp. of oil, and blend until smooth. Add hot water as needed to achieve desired consistency.
  6. Transfer to a serving dish, sprinkle with minced green onions, and drizzle with olive oil.
  7. Serve warm with fresh vegetables, crackers, or tortilla chips.
