White Bean & Bacon Dip

Ingredients

center cut bacon, chopped into small pieces

fat free reduced sodium chicken broth

can (19 oz)
Cannellini beans, drained and rinsed

tablespoons
diced scallions, divided

tablespoon
fresh lemon juice

teaspoon
hot sauce (e.g., Sriracha)
⅛
teaspoon
salt
⅛
teaspoon
paprika
Instructions
1. Cook the chopped bacon in a medium saucepan over medium heat until crispy, then remove and drain on paper towels.
2. Reserve about 2 teaspoons of bacon grease in the pan and discard the rest.
3. Add minced garlic to the bacon grease and cook until golden and fragrant.
4. Stir in the chicken broth and Cannellini beans, bring to a boil, then reduce heat and simmer for 10 minutes.
5. In a food processor, blend the bean mixture with 2 tablespoons of scallions, lemon juice, hot sauce, salt, and paprika until smooth.
6. Transfer to a bowl, mix in the remaining scallions and most of the bacon, then top with the reserved bacon pieces.
7. Serve warm, or reheat in the microwave if prepared in advance.
