Black Bean Dip

Ingredients

The dip

  • 1 tbsp olive oil
  • 1 medium-sized yellow onion
  • 4 cloves garlic
  • 1 400 mL can black beans
  • 1 tsp sea salt
  • 1 tsp cumin
  • ½ tsp black pepper
  • ½ tsp red chili flakes
  • 1 medium-sized tomato
  • ¼ cup pickled banana peppers
  • ¼ cup pickled jalapenos
  • ¼ cup cilantro
  • ¼ cup shredded cheese
  • 2 tbsp sour cream
  • 2 tbsp green salsa

Toppings

  • ¼ cup feta cheese
  • to taste fresh lime juice
  • to taste more cilantro

Instructions

  1. Heat olive oil in a medium pot and sauté chopped onions and garlic until translucent.
  2. In a food processor, combine black beans, salt, cumin, pepper, red chili flakes, chopped tomato, pickled banana peppers, jalapenos, and cilantro. Blend until smooth.
  3. Add the sautéed onions and garlic to the food processor and blend until there are no clumps.
  4. Transfer the mixture back to the pot and cook on low heat for 20 minutes to thicken.
  5. Stir in cheese, sour cream, and green salsa before serving.
  6. Top with cilantro, lime juice, and optional feta cheese.
