Roasted Garlic Kale Hummus

Instructions
- Preheat the oven to 400°F.
- Wrap the garlic cloves in foil and roast in the oven for about 20 minutes until soft.
- Allow the garlic to cool, then peel off the skin.
- In a blender or food processor, combine the roasted garlic, chickpeas, kale, lemon juice, water, tahini, and salt.
- Blend until smooth, leaving small bits of kale if desired.
- Transfer to a serving bowl and drizzle with olive oil if desired.
- Serve with veggies, crackers, pita bread, or use in sandwiches.
