Roasted Garlic Kale Hummus

Ingredients

  • 7 cloves garlic
  • 1 15-ounce can chickpeas
  • 1 cup kale leaves, finely chopped
  • ¼ cup fresh lemon juice
  • 3 tablespoons water
  • ¼ cup tahini
  • ½ teaspoon kosher salt
  • to taste olive oil for serving

Instructions

  1. Preheat the oven to 400°F.
  2. Wrap the garlic cloves in foil and roast in the oven for about 20 minutes until soft.
  3. Allow the garlic to cool, then peel off the skin.
  4. In a blender or food processor, combine the roasted garlic, chickpeas, kale, lemon juice, water, tahini, and salt.
  5. Blend until smooth, leaving small bits of kale if desired.
  6. Transfer to a serving bowl and drizzle with olive oil if desired.
  7. Serve with veggies, crackers, pita bread, or use in sandwiches.
