Ingredients

Spiced Pita Chips

  • 4 pieces store-bought or homemade pitas
  • 3 Tablespoons olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon lemon pepper
  • to taste coarse sea salt

Hummus

  • 1 and ¾ cups cooked chickpeas
  • 4 cloves roasted garlic
  • ¼ cup olive oil
  • ¼ cup tahini
  • ¼ cup grated or shredded parmesan cheese
  • ¼ teaspoon fresh ground black pepper
  • ¼ teaspoon ground cumin
  • 2 Tablespoons lemon juice
  • ¼ cup reserved chickpea liquid or water
  • to taste coarse sea salt

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare a baking sheet.
  2. Cut each pita into 8 triangles and brush with a mixture of olive oil, garlic powder, and lemon pepper. Sprinkle with sea salt and bake for 10 minutes until crispy.
  3. Peel the skins off the chickpeas and place them in a food processor. Pulse until somewhat mashed.
  4. Add roasted garlic, olive oil, tahini, parmesan, pepper, cumin, and lemon juice to the food processor. Process until creamy.
  5. Add reserved chickpea liquid and process for another minute. Adjust seasoning with salt and more liquid if needed.
  6. Serve the hummus drizzled with olive oil and topped with additional ingredients if desired.
