Ingredients

The hummus

  • 3 cups cooked chickpeas
  • 4-5 cloves roasted garlic
  • 2 juices limes
  • ¾ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ cup tahini
  • ½ to ¾ cup ice cold water
  • 2 tablespoons olive oil

For topping

  • to taste additional chickpeas
  • to taste olive oil
  • to taste za’atar
  • to taste smoked paprika

Instructions

  1. Pulse the chickpeas, garlic, lime juice, sea salt, and black pepper in a food processor until chopped.
  2. Add tahini and olive oil, then blend on low, scraping the sides as needed.
  3. Slowly drizzle in ice-cold water while the processor runs, blending for 3 to 5 minutes until light and fluffy.
  4. Taste and adjust seasoning if necessary, then transfer to a serving bowl.
  5. Drizzle with olive oil and add toppings before serving with veggies and pita.
