Ingredients

  • 28 oz canned low sodium chickpeas, rinsed and drained
  • ½ cup tahini
  • 3–4 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 3 cloves garlic
  • 1 teaspoon cumin
  • ½ teaspoon salt (or more to taste)
  • 1–2 tablespoons water

Instructions

  1. Drain and rinse the chickpeas, then dry them with a paper towel, removing the skins if desired.
  2. Add chickpeas, tahini, lemon juice, olive oil, garlic, cumin, and salt to a food processor.
  3. Blend for 2-3 minutes until creamy, adding water as needed to achieve the desired consistency.
  4. Serve immediately or store in an airtight container in the refrigerator for 4-5 days.
