Traditional Hummus

Ingredients

The base

  • ¾ cup chickpeas (dried or 2 cups canned and rinsed)
  • 1/3 cup juices (from boiling dried chickpeas)
  • 3 tablespoons lemon juice
  • 3 tablespoons tahini
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt

For soaking and cooking

  • water to cover for soaking and cooking chickpeas

Instructions

  1. If using dried chickpeas, rinse and soak them in water overnight.
  2. The next day, rinse again and boil in fresh water for 90 minutes, reserving the cooking liquid.
  3. If using canned chickpeas, simply rinse them.
  4. In a food processor, combine the chickpeas, cooking liquid (or fresh water), lemon juice, tahini, garlic, olive oil, and salt.
  5. Blend until smooth, adding more liquid if needed.
  6. Garnish with paprika if serving as a dip.
