Traditional Hummus
Ingredients
The base

juices (from boiling dried chickpeas)

Instructions
- If using dried chickpeas, rinse and soak them in water overnight.
- The next day, rinse again and boil in fresh water for 90 minutes, reserving the cooking liquid.
- If using canned chickpeas, simply rinse them.
- In a food processor, combine the chickpeas, cooking liquid (or fresh water), lemon juice, tahini, garlic, olive oil, and salt.
- Blend until smooth, adding more liquid if needed.
- Garnish with paprika if serving as a dip.
