Ingredients

The hummus base

  • 1 can (15 ounces) chickpeas, rinsed and drained, or 1 ½ cups cooked chickpeas
  • ½ teaspoon baking soda
  • ¼ cup lemon juice (from 1 ½ to 2 lemons), more to taste
  • 1 medium-to-large clove garlic, roughly chopped
  • ½ teaspoon fine sea salt, to taste
  • ½ cup tahini
  • 2 to 4 tablespoons ice water, more as needed
  • ½ teaspoon ground cumin
  • 1 tablespoon extra-virgin olive oil

Optional garnishes

  • to taste drizzle of olive oil or zhoug sauce
  • to taste sprinkle of ground sumac or paprika
  • to taste chopped fresh parsley

Instructions

  1. Boil chickpeas with baking soda in a saucepan covered with water for about 20 minutes until soft.
  2. Drain the chickpeas and rinse them under cool water.
  3. In a food processor, combine lemon juice, garlic, and salt; process until garlic is finely chopped and let it rest.
  4. Add tahini to the mixture and blend until thick and creamy.
  5. While blending, drizzle in 2 tablespoons of ice water until the mixture is smooth and pale.
  6. Add cumin and the drained chickpeas, then drizzle in olive oil while blending until super smooth.
  7. Taste and adjust salt and lemon juice as needed.
  8. Transfer hummus to a serving bowl, garnish as desired, and serve.
