Best Hummus
Ingredients
The hummus base

chickpeas, rinsed and drained, or 1 ½ cups cooked chickpeas

baking soda

lemon juice (from 1 ½ to 2 lemons), more to taste

medium-to-large clove
garlic, roughly chopped

fine sea salt, to taste

tahini

ice water, more as needed

ground cumin

extra-virgin olive oil

Instructions
- Boil chickpeas with baking soda in a saucepan covered with water for about 20 minutes until soft.
- Drain the chickpeas and rinse them under cool water.
- In a food processor, combine lemon juice, garlic, and salt; process until garlic is finely chopped and let it rest.
- Add tahini to the mixture and blend until thick and creamy.
- While blending, drizzle in 2 tablespoons of ice water until the mixture is smooth and pale.
- Add cumin and the drained chickpeas, then drizzle in olive oil while blending until super smooth.
- Taste and adjust salt and lemon juice as needed.
- Transfer hummus to a serving bowl, garnish as desired, and serve.
