Classic Hummus

Ingredients

  • 1 15.5-oz. can chickpeas
  • 1 large lemon
  • 1 clove garlic
  • ½ cup tahini
  • ¾ tsp. kosher salt
  • 10 cranks freshly ground black pepper
  • ¼ tsp. ground cumin
  • 3 Tbsp. extra-virgin olive oil
  • to taste za’atar and/or sesame seeds (for serving)

Instructions

  1. Drain and rinse the chickpeas, letting them drain while you prepare the other ingredients.
  2. Squeeze the juice from the lemon into a small bowl, aiming for 3–4 Tbsp.
  3. Smash and peel the garlic, then mash it into a paste.
  4. In a food processor, combine the drained chickpeas, lemon juice, garlic, tahini, salt, pepper, cumin, and water.
  5. Process until smooth, about 1 minute.
  6. With the motor running, stream in the olive oil and continue processing until the hummus is light and creamy, about 1 minute longer. Adjust salt to taste.
  7. Transfer the hummus to a serving bowl, top with za’atar and/or sesame seeds, and drizzle with additional olive oil.
