Classic Hummus

za’atar and/or sesame seeds (for serving)
Instructions
- Drain and rinse the chickpeas, letting them drain while you prepare the other ingredients.
- Squeeze the juice from the lemon into a small bowl, aiming for 3–4 Tbsp.
- Smash and peel the garlic, then mash it into a paste.
- In a food processor, combine the drained chickpeas, lemon juice, garlic, tahini, salt, pepper, cumin, and water.
- Process until smooth, about 1 minute.
- With the motor running, stream in the olive oil and continue processing until the hummus is light and creamy, about 1 minute longer. Adjust salt to taste.
- Transfer the hummus to a serving bowl, top with za’atar and/or sesame seeds, and drizzle with additional olive oil.
