Basic Hummus

Ingredients

The chickpeas

  • cups dry chickpeas
  • 5-6¼ cups water
  • 1 teaspoon baking soda

The flavorings

  • ¾-1 cup tahini
  • ¼ cup freshly squeezed lemon juice
  • 4 cloves garlic
  • teaspoons kosher salt
  • 6-7 tablespoons ice water
  • to taste coarse salt
  • to taste freshly ground black pepper

Instructions

  1. Rinse and sort the chickpeas, then cook them.
  2. For electric pressure cooker: Place rinsed chickpeas in the cooker, add 5 cups water, and cook for 35 minutes.
  3. For stovetop: Soak chickpeas overnight in cold water, then drain. Cook with baking soda for 3 minutes, add 6¼ cups water, and boil for 20-40 minutes until tender.
  4. Drain the chickpeas and place them in a food processor, processing until smooth.
  5. With the processor running, add lemon juice, tahini, garlic, and ice water until creamy.
  6. Let the hummus stand for 30 minutes before serving.
  7. Serve with olive oil and desired garnishes.
