Basic Hummus

Instructions
- Rinse and sort the chickpeas, then cook them.
- For electric pressure cooker: Place rinsed chickpeas in the cooker, add 5 cups water, and cook for 35 minutes.
- For stovetop: Soak chickpeas overnight in cold water, then drain. Cook with baking soda for 3 minutes, add 6¼ cups water, and boil for 20-40 minutes until tender.
- Drain the chickpeas and place them in a food processor, processing until smooth.
- With the processor running, add lemon juice, tahini, garlic, and ice water until creamy.
- Let the hummus stand for 30 minutes before serving.
- Serve with olive oil and desired garnishes.
