Ingredients

  • 3 cups chickpeas
  • cup tahini
  • ¼ cup lemon juice
  • 3 tablespoons extra virgin olive oil
  • 2-4 tablespoons ice water
  • 3-4 cloves garlic
  • ½ teaspoon sea salt

Instructions

  1. If using canned chickpeas, simmer them with juices for 10 minutes, then drain and rinse.
  2. In a food processor, blend tahini and lemon juice until creamy.
  3. Add warm chickpeas and drizzle in olive oil while processing.
  4. Gradually add ice water until desired consistency is reached.
  5. Add salt and sliced garlic, then process again and adjust seasoning as needed.
