Spinach Hummus Wrap

Ingredients

The wraps

  • 4 large tortillas
  • 8 leaves spinach
  • 1 whole cucumber
  • 2-3 mixed (mild) peppers
  • 1 sprig fresh parsley
  • to taste hemp seeds
  • to taste tofu or other protein

Spinach Hummus

  • 1 15-ounce can chickpeas
  • ¼ cup vegetable broth
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons tahini
  • 1 clove garlic
  • ½ teaspoon sea salt
  • ¼ cup fresh parsley
  • teaspoon cumin
  • teaspoon smoked paprika
  • to taste black pepper
  • cups fresh spinach

Instructions

  1. Make the spinach hummus by blending chickpeas, vegetable broth, lemon juice, tahini, garlic, salt, parsley, cumin, paprika, and black pepper in a food processor.
  2. Add fresh spinach to the hummus and blend again, then chill until ready to use.
  3. Spread about ¼ cup of hummus on each tortilla, leaving a ½-inch border.
  4. Layer spinach leaves, cucumber, and pepper slices on top of the hummus.
  5. Add fresh parsley, protein of choice, and hemp seeds if desired.
  6. Roll up the tortillas and wrap them in foil.
  7. Refrigerate until ready to use.
