Veggie Hummus Mini Wrap

Ingredients

Hummus

  • 2 cups Chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 2 tbsp Tahini
  • ¼ cup water

Wraps

  • 3 Multigrain Tortillas, Burrito Size
  • 1 cup Baby Spinach
  • ½ cup Yellow Pepper Strips
  • ½ cup Matchstick Carrots
  • ½ cup Purple Cabbage, shredded
  • ½ cup Cucumber, cut into thin strips
  • to taste salt

Instructions

  1. Prepare the hummus by blending chickpeas, cumin, garlic, and tahini in a food processor.
  2. Gradually add water to achieve the desired consistency and add salt to taste.
  3. Microwave the tortillas for about 15 seconds to soften them.
  4. Lay a tortilla flat and spread about 2 tablespoons of hummus on it.
  5. Layer the spinach and other vegetables evenly on top of the hummus.
  6. Roll the tortilla away from you to form a wrap.
  7. Trim the curved ends and slice the wrap into 4 equal pieces.
  8. Repeat with the remaining tortillas.
