Roasted Vegetable Hummus Wraps

Roasted Garlic White Bean Hummus
Instructions
- Make the Roasted Garlic White Bean Hummus and set it aside.
- Preheat the oven to 400°F.
- In a large bowl, combine the zucchini, yellow squash, red peppers, and red onion. Drizzle with olive oil, salt, and pepper, and toss to coat.
- Spread the seasoned vegetables on a baking sheet and bake for 20 minutes.
- To assemble the wraps, spread 2-3 tablespoons of hummus on each tortilla, add ½ cup of roasted vegetables, and top with ¼ cup of fresh spinach. Roll up the tortillas.
- Serve the wraps immediately.
