Roasted Red Pepper Wraps

Ingredients

The filling

  • 4 to 6 pieces red bell peppers
  • to taste N/A white bean hummus or goat cheese
  • to taste N/A cilantro or basil
  • for serving N/A lime wedges

The wraps

  • as needed N/A tortillas

Instructions

  1. Preheat the oven to 550ºF and prepare a sheet pan with parchment paper.
  2. Roast the peppers for about 30 minutes until blistered.
  3. Transfer the roasted peppers to a bowl and cover them to steam for at least 20 minutes.
  4. Once cool, peel off the skins, remove the stems, and discard the seeds.
  5. Heat the tortillas in a skillet or other method until pliable.
  6. Spread hummus on the tortillas, add the roasted peppers, and sprinkle with herbs.
  7. Squeeze lime juice over the wraps before serving.
  8. If using goat cheese, crumble it over the peppers instead of using hummus.
  9. If baking multiple wraps, preheat the oven to 350ºF and bake for 5 minutes.
