Instructions
- Preheat the oven to 550ºF and prepare a sheet pan with parchment paper.
- Roast the peppers for about 30 minutes until blistered.
- Transfer the roasted peppers to a bowl and cover them to steam for at least 20 minutes.
- Once cool, peel off the skins, remove the stems, and discard the seeds.
- Heat the tortillas in a skillet or other method until pliable.
- Spread hummus on the tortillas, add the roasted peppers, and sprinkle with herbs.
- Squeeze lime juice over the wraps before serving.
- If using goat cheese, crumble it over the peppers instead of using hummus.
- If baking multiple wraps, preheat the oven to 350ºF and bake for 5 minutes.
