Collard Hummus Wraps

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Spread the spiralized beet noodles on the baking sheet, coat with olive oil spray, and season with salt and pepper.
- Roast the beets for 10 minutes, tossing halfway through until softened.
- Lay the collard leaves flat and spread half the hummus on each, leaving a border.
- Divide the roasted beet noodles between the leaves, add avocado slices, and top with alfalfa sprouts.
- Fold the sides of the collard leaves in and roll them up like a burrito.
- Slice each wrap in half and secure with toothpicks before serving.
