Collard Hummus Wraps

Ingredients

The wraps

  • 2 large collard leaves
  • ½ cup hummus
  • ½ large avocado
  • 1 cup alfalfa sprouts

The filling

  • 1 large golden beet
  • to taste olive oil cooking spray
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Spread the spiralized beet noodles on the baking sheet, coat with olive oil spray, and season with salt and pepper.
  3. Roast the beets for 10 minutes, tossing halfway through until softened.
  4. Lay the collard leaves flat and spread half the hummus on each, leaving a border.
  5. Divide the roasted beet noodles between the leaves, add avocado slices, and top with alfalfa sprouts.
  6. Fold the sides of the collard leaves in and roll them up like a burrito.
  7. Slice each wrap in half and secure with toothpicks before serving.
