Healthy Vegan Collard Green Wraps

Instructions
- Boil a large pot of water and blanch collard greens for 30-60 seconds until pliable.
- Remove greens from water and shake off excess.
- Prepare the veggies: grate beets and carrots, slice avocado, and make crispy tofu.
- For crispy tofu, season cubed tofu with salt and spices, then sear in olive oil until crispy.
- Spread ¼ cup hummus on the lower middle of each collard green leaf.
- Top with tofu, veggies, and herbs, then roll up like a burrito.
- Store wrapped in plastic wrap if not serving immediately, or cut in half and serve with tahini sauce.
