Ingredients

The wraps

  • 4 leaves extra large collard greens
  • cups Hummus
  • 1 cup crispy turmeric tofu cubes (optional)
  • 1–2 units avocados
  • ½–1 cup grated carrots
  • ½–1 cup grated beets
  • 1 cup greens (watercress, arugula, spinach, or micro-greens)
  • to taste units fresh herbs (cilantro, parsley, basil, mint)

Optional sauce

  • to taste units Everyday Tahini Sauce

Instructions

  1. Boil a large pot of water and blanch collard greens for 30-60 seconds until pliable.
  2. Remove greens from water and shake off excess.
  3. Prepare the veggies: grate beets and carrots, slice avocado, and make crispy tofu.
  4. For crispy tofu, season cubed tofu with salt and spices, then sear in olive oil until crispy.
  5. Spread ¼ cup hummus on the lower middle of each collard green leaf.
  6. Top with tofu, veggies, and herbs, then roll up like a burrito.
  7. Store wrapped in plastic wrap if not serving immediately, or cut in half and serve with tahini sauce.
