Ingredients

The wraps

  • 1 large collard leaves

The spreads

  • to taste Zucchini Hummus or store-bought
  • to taste Oil-Free Arugula Pesto or store-bought

The fillings

  • to taste sliced raw veggies (bell peppers, cucumbers, radishes, shredded carrots, sprouts, etc.)
  • to taste pre-roasted vegetables (artichoke hearts, red peppers, red onions, tomatoes, etc.)

Instructions

  1. Trim the thick stem from the collard leaf to make it easier to wrap.
  2. Spread your favorite spreads (hummus and pesto) generously in the center of the collard leaf.
  3. Arrange the sliced raw and pre-roasted veggies on top of the spreads.
  4. Roll the collard leaf over the filling like a burrito, tucking in the sides as you go.
  5. Slice in half if desired and enjoy.
