Easy Mediterranean Collard Wraps

The fillings

sliced raw veggies (bell peppers, cucumbers, radishes, shredded carrots, sprouts, etc.)

pre-roasted vegetables (artichoke hearts, red peppers, red onions, tomatoes, etc.)
Instructions
- Trim the thick stem from the collard leaf to make it easier to wrap.
- Spread your favorite spreads (hummus and pesto) generously in the center of the collard leaf.
- Arrange the sliced raw and pre-roasted veggies on top of the spreads.
- Roll the collard leaf over the filling like a burrito, tucking in the sides as you go.
- Slice in half if desired and enjoy.
