Chicken Quinoa Collard Wraps

Instructions
- Remove the non-leafy stem from the collard leaves and trim the thick portion of the spine.
- In a small bowl, mix the shredded chicken with quinoa and balsamic vinegar dressing.
- Lay the collard leaves flat and spread one tablespoon of hummus on each leaf.
- Top the hummus with the chicken mixture, shredded carrots, cabbage, red pepper strips, and chopped scallions.
- Fold the sides of the collard leaves in and roll them up starting from the end where the spine was trimmed.
- Cut the wraps in half and serve.
