Chicken Quinoa Collard Wraps

Ingredients

The wraps

  • 6 leaves collard

The filling

  • 5 ounces cooked chicken breast
  • ¾ cup cooked quinoa
  • 2 tablespoons balsamic vinegar dressing
  • 6 tablespoons hummus
  • 2 medium carrots
  • ½ cup shredded cabbage
  • ½ medium red pepper
  • 3 medium scallions

Instructions

  1. Remove the non-leafy stem from the collard leaves and trim the thick portion of the spine.
  2. In a small bowl, mix the shredded chicken with quinoa and balsamic vinegar dressing.
  3. Lay the collard leaves flat and spread one tablespoon of hummus on each leaf.
  4. Top the hummus with the chicken mixture, shredded carrots, cabbage, red pepper strips, and chopped scallions.
  5. Fold the sides of the collard leaves in and roll them up starting from the end where the spine was trimmed.
  6. Cut the wraps in half and serve.
