Instructions
- Make the spread by blending all spread ingredients in a food processor until semi-smooth.
- Chop the cucumber and bell pepper.
- Lay a collard leaf flat, spread some of the mixture on it, then layer with turkey, cucumber, and bell pepper.
- Roll the leaf up burrito-style and serve whole or cut in half.
