Vegan Collard Green Burritos

Instructions
- Prepare the walnut taco meat and cheese spread if not done already.
- Wash collard green leaves and cut off the large stems at the base.
- Thinly shave the remaining stem at the base of the collard greens to make them pliable.
- Place a collard green leaf on a cutting board and add ½ cup of taco meat, ¼ cup of sprouts, ¼ cup of cilantro, slices of avocado, pickled onion, and spoonfuls of cheese spread and salsa.
- Roll the collard leaf over the fillings lengthwise, fold in the ends, and roll again to secure.
- Repeat with remaining collard leaves and fillings.
- Serve fresh, or store leftovers in the refrigerator for up to 2 days.
