Ingredients

Vegan Walnut Meat

  • 1 cup raw walnuts
  • 2 tablespoons oil
  • 2 tablespoons water
  • ½ medium onion, diced
  • 3 cloves garlic, peeled and minced
  • 2 tablespoons soy sauce
  • ½ teaspoon liquid smoke
  • ½ teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 ½ cups cooked black beans

Seasoned Rice

  • 1 ½ cups cooked white or brown rice
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon tomato paste

Vegan Burritos

  • 8 large burrito wraps
  • 1 cup salsa or pico de gallo
  • 1 cup guacamole
  • 1 ½ cups shredded vegan cheese
  • 2 cups lettuce, shredded or chopped
  • ½ cup lime crema

Instructions

  1. Prepare the walnut meat by pulsing soaked walnuts with oil and water in a food processor until minced.
  2. Sauté onion and garlic in a pan, then add walnut mixture and seasonings, including black beans, and cook for 5 minutes.
  3. Mix tomato paste, paprika, salt, and pepper into the warm rice.
  4. Heat burrito wraps in a pan or microwave to make them flexible.
  5. Assemble burritos by layering seasoned rice, walnut meat, lettuce, cheese, salsa, guacamole, hot sauce, and lime crema.
  6. Roll the burrito tightly and seal the edges.
  7. Cook the burrito seam-side down in a pan until golden brown, then flip and cook the other side.
  8. Slice in half, wrap in foil if desired, and serve.
