Instructions
- Prepare the walnut meat by pulsing soaked walnuts with oil and water in a food processor until minced.
- Sauté onion and garlic in a pan, then add walnut mixture and seasonings, including black beans, and cook for 5 minutes.
- Mix tomato paste, paprika, salt, and pepper into the warm rice.
- Heat burrito wraps in a pan or microwave to make them flexible.
- Assemble burritos by layering seasoned rice, walnut meat, lettuce, cheese, salsa, guacamole, hot sauce, and lime crema.
- Roll the burrito tightly and seal the edges.
- Cook the burrito seam-side down in a pan until golden brown, then flip and cook the other side.
- Slice in half, wrap in foil if desired, and serve.
