Vegan Rice and Black Bean Burrito

Ingredients

For Burritos

  • 2 tortillas gluten-free if needed
  • ¾ cup cooked brown rice
  • ¾ cup cooked black beans
  • ½ an avocado sliced
  • to taste sea salt
  • ½ cup Salsa Crema
  • corn and chopped cilantro for garnish (optional)

For Salsa Crema

  • ¾ cup unsweetened cashew milk
  • ¾ cup your favorite salsa
  • 1 cup raw cashews
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Combine rice and beans in a bowl and add salt to taste.
  2. Place half of the rice/bean mixture into the center of each tortilla.
  3. Add half of the sliced avocado on top of the rice and beans, and drizzle with salsa crema if desired.
  4. Fold the sides of the tortilla in and roll it tightly to close the burrito.
  5. Place the burrito seam side down into a frying pan and cook on medium-low for about 5 minutes until browned.
  6. Flip the burrito and brown the other side for another 5 minutes.
  7. Once fully grilled, place burritos on a plate and drizzle with Salsa Crema, garnishing with corn and chopped cilantro if desired.
