Vegan Rice and Black Bean Burrito

cooked brown rice

cooked black beans

an avocado
sliced

Salsa Crema
-
corn and chopped cilantro for garnish (optional)
For Salsa Crema

unsweetened cashew milk

¾
cup
your favorite salsa

raw cashews

tablespoon
lemon juice (optional)
Instructions
- Combine rice and beans in a bowl and add salt to taste.
- Place half of the rice/bean mixture into the center of each tortilla.
- Add half of the sliced avocado on top of the rice and beans, and drizzle with salsa crema if desired.
- Fold the sides of the tortilla in and roll it tightly to close the burrito.
- Place the burrito seam side down into a frying pan and cook on medium-low for about 5 minutes until browned.
- Flip the burrito and brown the other side for another 5 minutes.
- Once fully grilled, place burritos on a plate and drizzle with Salsa Crema, garnishing with corn and chopped cilantro if desired.
