Vegan Burrito with Refried Beans and Corn

Ingredients

The Burrito

  • 2 pieces whole wheat tortillas (8-inch)
  • cup prepared vegetarian refried beans
  • ½ cup frozen corn
  • ½ cup shredded cabbage
  • 4 pieces cherry tomatoes, halved
  • ½ piece avocado, sliced thinly
  • 2 sprigs cilantro
  • ¼ cup prepared mild salsa

Optional Toppings

  • to taste green onions, sliced
  • to taste cilantro, sliced
  • to taste radishes, sliced
  • to taste black olives, sliced
  • to taste jalapeños, sliced
  • to taste plant-based cashew cheese
  • to taste plant-based sour cream

Instructions

  1. Warm the tortillas.
  2. Heat the refried beans.
  3. Heat the corn.
  4. To prepare each burrito, place one tortilla on a flat surface and spread ⅓ cup of refried beans over the center.
  5. Top with ¼ cup of corn, ¼ cup of cabbage, 2 halved cherry tomatoes, 2 slices of avocado, and 1 sprig of cilantro.
  6. Roll the burrito and slice it in half.
  7. Serve each burrito with 2 tablespoons of salsa.
  8. Garnish with additional toppings as desired.
