Ingredients

The burrito base

  • 1 cup lentil walnut taco meat
  • 1 cup black beans
  • 1 cup Mexican rice
  • 4 pieces burrito sized tortillas

Optional toppings

  • to taste guacamole or avocado
  • to taste jalapeño
  • to taste salsa
  • to taste sour cream
  • to taste lettuce
  • to taste shredded cheese or cheese sauce
  • to taste hot sauce
  • to taste spicy cilantro cream sauce

Instructions

  1. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 30-45 seconds.
  2. Fill the tortillas with your choice of ingredients, using about ½ cup taco meat, ¼ cup beans, and ¼ cup rice.
  3. Fold in the sides of the tortilla, then bring the bottom over the top of the filling and roll tightly.
  4. Place the burrito seam side down on a heated pan over medium-low heat and grill for about 3-5 minutes until sealed.
  5. Enjoy your burrito, optionally drizzling sauce over the top.
