Ingredients

Tofu Taco Meat

  • 1 package super firm high protein tofu (16 oz.)
  • ¼ cup DIY Taco Seasoning (or store-bought)
  • ½ cup water

Quick Guacamole

  • 1 large avocado
  • ½ Tbsp lime juice
  • ¼ tsp sea salt

Burrito Assembly

  • 2 cups chopped iceberg lettuce
  • 2 medium roma tomatoes
  • 4 pieces burrito-size flour tortillas
  • cup Creamy White Bean Queso (or store-bought vegan queso)
  • 2 cups corn tortilla chips

Instructions

  1. Prepare the Creamy White Bean Queso if not already made.
  2. Crumble the tofu into a skillet, add taco seasoning and water, and cook until liquid is absorbed.
  3. Mash the avocado with lime juice and salt to make guacamole.
  4. Chop the lettuce and tomatoes for assembly.
  5. Heat tortillas in a skillet until pliable.
  6. Assemble the burrito with queso, tofu meat, guacamole, tomatoes, chips, and lettuce.
  7. Fold the burrito and optionally fry it in a skillet until golden.
  8. Repeat the assembly for all burritos and enjoy immediately.
