Ingredients

The Beans

  • cups cooked black beans
  • 1 tablespoon fresh lime juice
  • 2 teaspoons Taco Seasoning
  • 1 teaspoon extra-virgin olive oil
  • ¼ teaspoon sea salt

The Peppers

  • 2 teaspoons extra-virgin olive oil
  • 2 red bell peppers stemmed, seeded, and sliced
  • to taste sea salt
  • to taste freshly ground black pepper

The Burritos

  • 6 large flour tortillas
  • to taste spinach or lettuce
  • to taste Spanish Rice or Cilantro Lime Rice
  • to taste guacamole
  • to taste pickled red onions
  • to taste fresh cilantro leaves
  • to taste jalapeño peppers, thinly sliced
  • to taste Homemade Salsa, Tomatillo Salsa, or Corn Salsa

Instructions

  1. Prepare the beans by mixing black beans, lime juice, taco seasoning, olive oil, and salt in a bowl.
  2. Cook the peppers in olive oil in a skillet until soft and browned.
  3. Assemble the burritos by layering spinach, rice, beans, peppers, guacamole, pickled onions, cilantro, and jalapeños on the tortillas.
  4. Fold the tortillas to close the burritos and serve with salsa.
