Ingredients

Tofu Filling

  • 14 ounce extra firm tofu
  • 1 tablespoon canola oil
  • 1 small sweet yellow onion
  • 1 medium green bell pepper
  • 1 cup diced tomato
  • ½ teaspoon salt
  • 4 cloves garlic
  • 2 tablespoons tomato paste
  • 15 ounce canned chickpeas
  • 2 tablespoons nutritional yeast (optional)
  • 1 teaspoon chili powder
  • 1 teaspoon dry oregano
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ¼ teaspoon smoked paprika
  • cup vegetable broth

Assembly

  • 4 10-inch tortillas
  • to taste arugula
  • to taste salsa verde
  • to taste avocado

Instructions

  1. Drain the tofu and remove excess water.
  2. Heat oil in a skillet and sauté onion, pepper, tomato, and salt for 6-8 minutes.
  3. Add minced garlic and tomato paste, cooking until fragrant.
  4. Deglaze the pan with vegetable broth if necessary.
  5. Crumble tofu into the pan and stir in chickpeas, seasonings, and vegetable broth.
  6. Simmer covered for 10 minutes, then uncover and cook for an additional 5 minutes.
  7. Assemble burritos with filling, arugula, avocado, and salsa verde in tortillas.
