Instructions
- Drain the tofu and remove excess water.
- Heat oil in a skillet and sauté onion, pepper, tomato, and salt for 6-8 minutes.
- Add minced garlic and tomato paste, cooking until fragrant.
- Deglaze the pan with vegetable broth if necessary.
- Crumble tofu into the pan and stir in chickpeas, seasonings, and vegetable broth.
- Simmer covered for 10 minutes, then uncover and cook for an additional 5 minutes.
- Assemble burritos with filling, arugula, avocado, and salsa verde in tortillas.
