Ingredients

The chipotle baked tofu

  • ¼ cup adobo sauce from a can of chipotle peppers
  • 3 tablespoons lime juice
  • 3 tablespoons tomato paste
  • 1 ½ tablespoons maple syrup
  • 2 cloves garlic, minced
  • to taste salt
  • 1 14 ounce package extra firm tofu, drained and pressed

The burritos

  • 2 ripe plantains, peeled and cut into 1-inch pieces
  • 3-4 tablespoons vegetable oil
  • 4 large flour tortillas
  • 1 medium avocado, sliced
  • 1 cup shredded lettuce
  • ½ cup fresh cilantro

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, mix the adobo sauce, lime juice, tomato paste, maple syrup, and minced garlic. Season with salt and adjust consistency if needed.
  3. Arrange tofu cubes on the baking sheet and brush with a third of the sauce. Bake for 15 minutes.
  4. Flip the tofu, brush with another third of the sauce, and bake for another 15 to 20 minutes until browned.
  5. In a skillet, heat oil over medium heat and add plantain slices. Cook for about 4 minutes on each side until browned.
  6. Transfer cooked plantains to a paper towel-lined plate.
  7. Assemble the burritos by placing tofu, plantains, reserved sauce, avocado, lettuce, and cilantro in each tortilla. Roll up and serve.
