Chipotle Baked Tofu & Plantain Burritos

extra firm tofu, drained and pressed
The burritos

plantains, peeled and cut into 1-inch pieces

vegetable oil

flour tortillas

avocado, sliced

shredded lettuce

cup
fresh cilantro
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a bowl, mix the adobo sauce, lime juice, tomato paste, maple syrup, and minced garlic. Season with salt and adjust consistency if needed.
- Arrange tofu cubes on the baking sheet and brush with a third of the sauce. Bake for 15 minutes.
- Flip the tofu, brush with another third of the sauce, and bake for another 15 to 20 minutes until browned.
- In a skillet, heat oil over medium heat and add plantain slices. Cook for about 4 minutes on each side until browned.
- Transfer cooked plantains to a paper towel-lined plate.
- Assemble the burritos by placing tofu, plantains, reserved sauce, avocado, lettuce, and cilantro in each tortilla. Roll up and serve.
