Magic Green Sauce
Instructions
- Make the enchilada sauce and simmer it while preparing other ingredients.
- Preheat the oven to 375°F. Press excess moisture from the tofu.
- Heat oil in a skillet, crumble tofu, and pan-fry until browned, adding sauce to taste.
- In a greased 9x13 pan, layer tortillas, tofu, sauce, and cheese, repeating layers.
- Cover with greased foil and bake for 20-30 minutes until bubbly. Remove foil to brown cheese if desired.
- Serve with black beans, avocado, and other toppings.
