Ingredients

The Marinade

  • 1 medium green bell pepper
  • 1 medium tomato
  • ½ medium onion
  • ½ cup water
  • 2 pieces chipotle chilies
  • 2 tablespoons adobo sauce
  • 2 cloves garlic
  • 1 teaspoon red wine vinegar
  • 1 teaspoon ancho chile powder
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The Tofu

  • 1 tablespoon olive oil
  • 1 package (16 ounces) extra-firm tofu

Instructions

  1. Combine the marinade ingredients in a food processor and pulse until chunky and mixed.
  2. Heat oil in a skillet and cook the pressed tofu until golden brown, about 10 minutes.
  3. Chop or pulse the tofu into ¼ inch pieces and mix with the marinade. Let it sit for at least 30 minutes.
  4. In a skillet, add the marinated tofu and some water, bring to a boil, then simmer until heated through, about 10 minutes.
